Pentanoic acid


Monocarboxylic acid found in valerian oil. It is a colorless liquid, of penetrating smell and flavor, little miscible in water and miscible in alcohol and ether. It is obtained from its natural sources or by oxidation of n-pentanol. It is used in the preparation of its derivatives and in that of aromas and perfumes.
